Ingredients

Serves 8

1 box Barilla Penne Rigate pasta
4 tbsp extra virgin olive oil, divided
2 medium-sized zucchini, diced small
2 pts multicolour cherry tomatoes
3 slices lemon, 1/8 inch thick
8 oz feta cheese (1 block)
1 tbsp fresh oregano
15 leaves fresh basil, torn
1/4 cup pistachio nuts, shelled and roughly chopped
To taste salt and black pepper

Method

Step 1

Preheat oven to 400°F and bring a large pot of water to a boil.

Step 2

Place zucchini, tomatoes, lemon and oregano in a baking dish. Season with salt, pepper and 2 tbsp olive oil. Place feta right in the centre, bake for 20 minutes.

Step 3

Meanwhile, cook Barilla Penne pasta according to package directions. 1 minute before pasta is ready, add 1/2 cup cooking water to freshly baked feta, and with a spoon smash the cheese.

Step 4

Drain Barilla Penne pasta, then mix well with veggies. Stir in basil, drizzle with remaining oil and combine well again.

Step 5

Top with pistachios before serving.
