In this recipe, premium Barilla Capellini pasta—also known as angel hair pasta—is cooked with tomatoes, red onion and Parmigiano Reggiano cheese, then fried until golden brown and crispy on both sides, and served with a rich sauce. Ingredients

1 box | Barilla Capellini pasta |
1/4 cup | extra virgin olive oil |
2 cups | red onions, julienned |
3 cups | fresh tomatoes, diced, peeled and seeded |
2 leaves | fresh basil, chopped |
1/2 cup | Parmigiano Reggiano cheese, grated and divided |
2 tbsp | butter |

Method
Step 1
Heat olive oil in a large skillet, and sauté onions over medium heat for about 10 minutes.
Step 2
Add tomatoes, basil, and 1 cup water and simmer.
Step 3
Season with salt and pepper to taste, then simmer for 5-7 minutes and set aside.
Step 4
Bring a large pot of water to a boil and cook Barilla Capellini pasta according to package directions.
Step 5
Drain and toss with 1/2 the sauce and Parmigiano Reggiano cheese.
Step 6
Adjust seasonings and allow the pasta to cool.
Step 7
Melt butter in a non-stick pan, add Barilla Capellini pasta, and fry until the bottom is golden brown and crispy.
Step 8
Invert it onto a plate or cutting board.
Step 9
Return Barilla Capellini pasta to pan to cook another side, and cook until golden brown and crispy on both sides.
Step 10
Invert onto a serving platter, pour reserved sauce over pasta cake and serve.
