Ingredients

Serves 3

1/2 box Barilla Gluten Free Macaroni pasta
1 jar tomato and basil sauce
2 tbsp extra virgin olive oil
1/2 cup onions, chopped
1 cup celery, chopped
1 cup carrots, chopped
1 garlic clove
2 cups cabbage, thinly sliced
1 cup zucchini, chopped
1 cup green peas
To taste salt
1/4 tsp black pepper, freshly ground
2 quarts chicken stock
2 cups broccoli florets
1 15-oz can cannellini beans, drained
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
3/4 cup Parmigiano Reggiano cheese, grated

Method

Step 1

Sauté chopped garlic, celery, carrots, and onion with olive oil for 2-5 minutes over medium heat. Add garlic right away.

Step 2

Stir in cabbage, zucchini, and green peas. Season with salt and pepper and cook for 5 minutes.

Step 3

Add sauce and stock; bring to a boil.

Step 4

Add Barilla Gluten Free Macaroni pasta, broccoli, beans and cook for 9 minutes. Allow soup to rest for 10 minutes, then stir in fresh herbs and cheese before serving.
