Infusing the flavours of the Philippines and Italy, Chef Daniel Cancino of @dannnycancino puts his own twist on 'palabok', a Filipino recipe known for its golden annatto sauce and seafood toppings. Perfectly al dente Barilla Gluten Free Spaghetti pasta is paired with shrimp, mussels, clams and smoked bangus, then topped with salmon roe, for a sea of fantastic flavours to dive into.
Ingredients
Serves 4
1/2 box | Barilla Gluten Free Spaghetti pasta |
3 tbsp | garlic, chopped |
3 tbsp | ginger, grated |
3 tbsp | shallot, chopped |
2 tbsp | annatto powder |
To taste | fish sauce |
1 | red finger chili, sliced |
1 cup | white wine |
1/2 cup | smoked bangus (milk fish), cooked and flaked |
16 | shrimp (no shell, tail on) |
16 | mussels, cleaned and bearded |
8 | manila clams, cleaned |
6 cups | shrimp stock |
8 | calamansi, halved |
6 | calamansi, juiced |
1 cup | flat parsley, chopped |
1/2 cup | chicharron, crushed |
1/2 | scallion, sliced |
1/4 cup | crispy garlic |
2 tbsp | salmon roe, cured |
2 | eggs, soft boiled and halved |

Method
Step 1
Bring 4 L salted water to a boil and cook Barilla Gluten Free Spaghetti pasta for 2 minutes less than package directions.
Step 2
In a pan, sweat garlic, ginger, shallot in olive oil until soft. Add annatto powder and cook out.
Step 3
Deglaze with white wine and reduce until almost all the liquid is gone; then add shrimp stock and bring to simmer.
Step 4
Add manila clams and mussels, set aside as soon as any of them open.
Step 5
Add shrimp and cook until it just begins to colour, set aside.
Step 6
Season broth with fish sauce to taste. Add smoked bangus and Barilla Gluten Free Spaghetti pasta, simmer until al dente.
Step 7
Add calamansi juice, chopped parsley, chili and return shellfish to the pan; toss well.
Step 8
Plate and garnish with chicharron, scallion, crispy garlic, salmon roe, soft-boiled egg, a drizzle of olive oil, and calamansi halves.
