Barilla Guerrero-Style Mexican Pasta Soup

Italy meets Mexico in this recipe inspired by pozole, a traditional soup from the state of Guerrero. Served with perfectly al dente Barilla Cut Macaroni pasta, this soup is full of flavours from the garlic, onion, and tomatoes, and its a kick of spice from the Poblano and Guajillo chili peppers! It's also packed with shredded chicken for a satisfying, high protein meal, through and through.
Ingredients
Serves 4
1/2 box | Barilla Macaroni pasta |
4 | Guajillo chili peppers, chopped |
1 | boneless chicken breast |
2 | boneless chicken legs |
To taste | salt and pepper |
2 | bay leaves |
3 tbsp | olive oil |
4 cloves | garlic |
1 | onion, thinly sliced |
3 | tomatoes, chopped |
1 tbsp | poblano pepper powder |
To taste | lime |
1/2 bunch | romaine lettuce, washed and shredded |
1 handful | radishes, sliced |
To taste | oregano |

Method
Step 1
Boil the chili peppers until tender and remove the seeds.
Step 2
Set them and the boiling water aside.
Step 3
Cook the chicken in 1 litre of boiling water with salt, pepper, and bay leaves.
Step 4
Heat 2 tbsp oil in a pot and sauté the garlic, half the onion, the Guajillo peppers, and tomatoes.
Step 5
Cook for 4 minutes, and blend it all in the water in which you boiled the chili peppers; then strain.
Step 6
Fry this mix in a skillet with 1 tbsp hot oil, and season with salt and pepper.
Step 7
Remove the chicken from the broth and add Barilla Macaroni pasta.
Step 8
After 5 minutes, include the chili pepper mix, reduce the heat and cook until Barilla Macaroni pasta is al dente.
Step 9
Shred the chicken, and add cooked Barilla Macaroni pasta back into the broth.
Step 10
Serve with shredded lettuce and radishes, and garnish with a pinch of oregano.
