Barilla Hong Kong-Style Macaroni Pasta Soup

Enjoy a taste of Hong Kong with this comforting macaroni soup recipe by Michelle Wong of @siftandsimmer. Perfectly al dente Barilla Macaroni pasta, mixed vegetables and crispy cubes of meat are simmered in a flavourful chicken stock, and seasoned with soy sauce and sesame oil. Garnished with a fried egg with runny yolk, it's a simple yet satisfying dish for lunch or dinner.

Ingredients

Serves 4

1 1/2 cups Barilla Macaroni pasta
1 tbsp vegetable oil
4 eggs
1 1/2 cups mixed vegetables, frozen or fresh
3 slices luncheon meat
4 cups chicken stock
1 tsp soy sauce
To taste black pepper, to taste
1 tbsp sesame oil
Green onions, to garnish

Method

Step 1

Cook Barilla Macaroni pasta according to the directions until al dente. Drain and set aside.

Step 2

In a frying pan, heat 1 tbsp vegetable oil over medium heat and cook the eggs sunny-side up. Transfer to a plate and set aside.

Step 3

Next, fry 3 slices of luncheon meat, ensuring they are browned and crisp on both sides. Transfer to a cutting board and cut into pea-sized cubes. Set aside.

Step 4

In a small pot, add the chicken broth and bring to a boil. Add in the mixed vegetables, cubed luncheon meat and Barilla Cut Macaroni pasta. Stir and lower to a simmer.

Step 5

Add soy sauce, black pepper and check the seasoning. Remove from heat and drizzle in the sesame oil.

Step 6

Ladle the macaroni soup into bowls and serve with fried egg. Garnish with green onions if you'd like.
