Barilla Linguine Pasta with Caramelized Apple, Pumpkin and Bacon

You can never go wrong with this fall-inspired combo of pumpkin, apple and bacon. In this recipe, all 3 of these universally loved ingredients come together with perfectly al dente Barilla Linguine pasta for a range of textures that's equal parts creamy, crunchy and juicy. Bound to be a guest favourite, these harvest flavours will definitely get a queue going at your next dinner party!

Ingredients

Serves 8

1 box Barilla Linguine pasta
2 tbsp extra virgin olive oil
3 cups apples, peeled, diced 1/2 inch
3 cups pumpkin or butternut squash, peeled, diced 1/2 inch
6 slices thick cut bacon, 1/2 inch strips
1 tbsp fresh thyme, chopped
To taste sea salt and black pepper
2 tbsp pumpkin seeds, toasted
1 small goat cheese log

Method

Step 1

Preheat oven to 425°F.

Step 2

In mixing bowl, combine olive oil, apples, pumpkin, thyme and bacon lardoons.

Step 3

Place on non-stick baking sheet and bake for 25-30 minutes until apples are caramelized and pumpkin is soft.

Step 4

Cook Barilla Linguine pasta according to package directions; drain, reserving 1/2 cup pasta water. Place Barilla Linguine pasta and pasta water back in saucepan over medium heat.

Step 5

Add apple mixture, scraping all ingredients from baking sheet into Barilla Linguine pasta. Toss and heat through, season to taste.

Step 6

Place in 8 bowls and top with toasted pumpkin seeds and cheese.
