Ingredients

Serves 8

1 box Barilla Linguine pasta
3 tbsp sea salt
1 tbsp black pepper, freshly ground
6 tbsp extra virgin olive oil
6 tbsp unsalted butter
1/4 cup Parmigiano Reggiano cheese, freshly grated, plus extra for serving
1/4 cup pecorino romano cheese, freshly grated

Method

Step 1

Bring 4-6 quarts of water to a boil, then add salt.

Step 2

Add pepper to a 12-14 inch skillet and toast over medium heat, stirring until fragrant, about 20 seconds.

Step 3

Add olive oil and butter and stir occasionally until the butter has melted. Remove from the heat.

Step 4

Cook Barilla Linguine pasta until al dente, according to the package directions.

Step 5

Drain, reserving about 1/2 cup pasta cooking water.

Step 6

Add 1/4 cup reserved pasta water to the oil and butter mixture, then add Barilla Linguine pasta and stir.

Step 7

Stir in the cheeses; add a splash or more of the reserved pasta water if necessary to loosen the sauce.

Step 8

Serve immediately, with additional Parmigiano Reggiano cheese on the side.
