Chunks of butternut squash pair with perfectly al dente Barilla Macaroni pasta, fresh arugula and crumbled feta cheese for a colourful, kid-friendly dish, ready in just 30 minutes. Toss with optional beans or chickpeas for extra protein satisfaction, and drizzle with balsamic glaze or a fusion curry glaze for an extra flavour kick!
Ingredients
Serves 4
1 box | Barilla Macaroni pasta |
4 tbsp | extra virgin olive oil |
1 small | onion, diced |
1 | garlic clove |
1 small | butternut squash, diced |
2 cups | baby arugula |
To taste | salt and black pepper |
1/2 cup | feta cheese, crumbled |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
In a large skillet, heat olive oil and sauté onions for 3-4 minutes. Add whole garlic clove and sauté an additional 1-2 minutes.
Step 3
Add butternut squash and sauté for 4-5 minutes. Season with salt and pepper and remove the garlic.
Step 4
Cook Barilla Macaroni pasta according to package directions. Reserve 3/4 cup of the pasta cooking water, then drain.
Step 5
Toss Barilla Macaroni pasta with sauce and cooking water until 1/2 the liquid has evaporated. Add the beans and let them warm through, about 1 minute. Remove the skillet from the heat and stir in cheese and arugula, then drizzle with glaze.
