1 box Barilla Penne Rigate pasta
1/3 cup extra virgin olive oil
2 cloves garlic, chopped
2 medium zucchinis, sliced thin
1 lb plum tomatoes, chopped (may substitute 14.5-oz can diced tomatoes)
1/4 cup fresh basil, torn
1/3 cup Parmigiano Reggiano cheese, grated

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, heat olive oil in a large skillet over medium heat.

Step 3

Add garlic and sauté 1-2 minutes or until garlic turns golden in colour.

Step 4

Add zucchini to skillet and sauté for an additional 3 minutes.

Step 5

Add the tomatoes and basil; simmer 2 minutes, season with salt and pepper.

Step 6

Cook Barilla Penne Rigate pasta according to package instructions. Drain and toss with the sauce.

Step 7

Sprinkle with cheese and serve.
