3 tbsp | extra virgin olive oil |
3 | shallots, chopped |
6 | garlic cloves, minced |
1 large | zucchini, julienned |
4 tbsp | butter |
1 cup | ricotta cheese |
1/4 cup | black truffle pate |
1 tbsp | white truffle oil |
1/2 tsp | salt |
1/4 tsp | black pepper, freshly ground |

Method
Step 1
Heat olive oil in large skillet over medium heat.
Step 2
Add shallots and garlic; cook 3-4 minutes or until tender.
Step 3
Add zucchini and butter; cook 10 minutes, stirring occasionally.
Step 4
Add ricotta cheese, black truffle paté and truffle oil; continue cooking over low heat for 5 minutes.
Step 5
Cook Barilla Penne Rigate pasta according to package directions; drain and return to pot.
Step 6
Combine ricotta mixture, salt and pepper with hot Barilla Penne Rigate pasta; mix well to serve.
