Ingredients
Serves 5
1 box | Barilla Rigatoni pasta |
1 | small yellow onion, chopped |
4 tbsp | extra virgin olive oil, divided |
2 | garlic cloves, minced |
1 28-oz can | San Marzano tomatoes, chopped |
1 cup | fresh ricotta cheese |
To taste | salt and black pepper |
1/2 cup | Romano cheese, grated |
6 | basil leaves, torn |

Method
Step 1
Place a pot of water to boil and cook Barilla Rigatoni pasta according to package directions.
Step 2
In a skillet, sauté onion with half the olive oil for 3 minutes over medium heat. When onion turns translucent, add garlic. Cook for 1 minute, and add tomatoes with 1 cup of water. Bring to boil and simmer for 10 minutes.
Step 3
Add ricotta, salt and pepper and simmer for 5 more minutes.
Step 4
Drain Barilla Rigatoni pasta and toss with sauce for 1 minute. Turn heat off, and stir in Romano cheese, remaining olive oil and basil before serving.
