Ingredients

1 BoxBarilla Snowfall Pasta

⅓ cupunsalted butter

2french shallots, finely chopped

4garlic, finely chopped

1 tbspharissa paste (adjust according to desired level of spiciness)

½ cup35% cream

¾ cupfreshly grated Parmesan

2 tspfreshly chopped parsley

To tastesalt and pepper

Method

Step 1

Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 7 minutes. Reserve about 1 cup of the cooking water, then drain.

Step 2

In a large skillet, melt the butter over medium heat and let it brown until it develops a nice golden colour. Add the shallots and cook for 3 to 4 minutes, until tender and translucent.

Step 3

Stir in the garlic and harissa paste. Cook for 1 to 2 minutes, stirring. Reduce the heat and add the cream. Let it simmer gently for 2 minutes. Add the pasta along with a bit of the reserved cooking water and toss to combine. Turn off the heat and add the Parmesan and flat-leaf parsley. Toss again until the sauce is smooth and creamy. Adjust seasoning and add more pasta cooking water if needed.

Step 4

Serve in bowls or pasta plates and garnish with additional Parmesan and parsley.
