Ingredients

5 servings

1 boxBarilla Snowfall Pasta

2 tbspolive oil

3cubed chicken breasts

1white onion, thinly sliced

3garlic cloves, chopped

2 tspfresh thyme leaves

1 tspcrushed fennel seeds

4 cupssliced mushrooms of your choice

3/4 tspSalt

1/3 cupwhite wine

8 cupsreduced-salt chicken broth

3bay leaves

To tastePepper

1/2 cupvegan or regular cream

Method

Step 1

Heat oil in a large Dutch oven over a medium-high heat and brown the chicken cubes for 5 minutes, stirring only a few times. Set aside on a plate.

Step 2

In the same pan, cook the onion over a medium heat for 5 minutes, stirring frequently. Add oil if necessary.

Step 3

Add the garlic, thyme and fennel seeds, then cook for a further two minutes.

Step 4

Add the mushrooms and cook for a further two minutes.

Step 5

Deglaze with white wine and continue cooking for a further two minutes.

Step 6

Then add the stock, bay leaves and pepper, and bring to the boil.

Step 7

Add the Barilla Snowfall pasta, reduce the heat slightly and cook for 6 minutes.

Step 8

Add the chicken and cook for a further three minutes.

Step 9

Add the cream and stir gently.

Step 10

Serve with a drizzle of olive oil and parsley, if desired.
