Ingredients

1 BoxBarilla Snowfall Pasta

3-4 slicespancetta

3 tbspunsalted butter

2 clovesgarlic, minced or lightly smashed

½ cupdry white wine (Pinot Grigio or Sauvignon Blanc)

½ cuppeas (fresh or frozen)

¼ cupfreshly grated Parmesan, plus more for serving

Zest ½ lemon

To tasteSalt and cracked black pepper

Pinchred pepper flakes or a few sprigs fresh thyme

Method

Step 1

Bring a large pot of salted water to a boil and cook your Barilla Snowfall pasta until al dente. Reserve about ½ cup of pasta water before draining.

Step 2

In a large skillet over medium heat, cook the pancetta until golden and crisp, about 4–5 minutes. Transfer to a paper towel–lined plate, leaving a bit of the rendered fat in the pan.

Step 3

In the same pan, add butter and let it melt. Stir in garlic and cook until fragrant, about 30 seconds. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes until slightly reduced.

Step 4

Stir in the peas and cook for 2–3 minutes, just until tender and bright green.

Step 5

Add the cooked pasta directly to the pan, along with a splash of the reserved pasta water. Toss until the pasta is coated and glossy. Mix in Parmesan, lemon zest, and season with salt, pepper, and a pinch of red pepper flakes or thyme.

Step 6

Top with crispy pancetta and an extra sprinkle of Parmesan, serve immediately.
