Ingredients

Serves 8

1 box Barilla Spaghetti pasta
4 tbsp extra virgin olive oil
1 onion, diced
3 cloves garlic, chopped
2 tbsp thyme, chopped
3 cans chickpeas
3 quarts chicken stock
1 can tomatoes, chopped
To taste salt and black pepper
2 tsp parsley chiffonade

Method

Step 1

In a large pot, sauté chopped onions and thyme in olive oil until translucent, about 5 minutes.

Step 2

Add chopped garlic, cook additional 2 minutes.

Step 3

Stir in chickpeas (reserve 1 cup of chickpeas for garnish), broth, and tomatoes and bring to a boil.

Step 4

Season with salt and pepper and simmer for 10 minutes.

Step 5

In batches, process the soup in a blender until very smooth.

Step 6

Add mixture to pot; then add the reserved chickpeas and bring to a boil.

Step 7

Add Barilla Spaghetti pasta, and cook for half of the recommended cooking time.

Step 8

Let rest 10 minutes. Before serving, drizzle with olive oil and garnish with parsley.
