Ingredients

Serves 6

1/2 box Barilla Spaghettini pasta
1 egg
2 tbsp Parmigano Reggiano cheese
2 tbsp extra virgin olive oil
1 lb ground salmon
To taste salt and black pepper
1 cup arugula, packed
6 tbsp light mayonnaise
6 slices plum tomatoes

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, mix egg, olive oil, and cheese.

Step 3

Cook Barilla Spaghettini pasta according to package directions.

Drain and let cool for 5 minutes, then stir in egg mixture.
