Barilla Spaghettoni Pasta with Lobster, Cherry Tomatoes and White Wine

Ingredients

Serves 8

1 box Barilla Spaghettoni pasta
1 bay leaf
2 lobsters
1/4 cup extra virgin olive oil
1 garlic clove, chopped
1 medium white onion, sliced thin
1 tbsp flour
1 cup white wine
1 pt cherry tomato, halved
2 tbsp fresh parsley, chopped
1 tbsp butter

Method

Step 1

Bring a large pot of water to boil, then season with salt, pepper, and bay leaf.

Step 2

Add lobsters to the pot and cook for 5 minutes; then remove from the pot and allow to cool. Reserve the cooking water for the sauce.

Step 3

Remove meat from tail and claws; chop into 2-inch pieces and set aside.

Step 4

Heat half the olive oil in a skillet.

Step 5

Add garlic clove and lobster shells. Sauté until garlic is golden, then add flour and cook for 1 minute.

Step 6

Add wine to the skillet and cook until reduced by half, then season with salt and pepper.

Step 7

Add enough cooking water to cover shells and simmer until reduced by half.

Step 8

Heat remaining olive oil in another skillet.

Step 9

Add onions and sauté over medium heat until soft.

Step 10

Add cherry tomatoes and the wine sauce.

Step 11

Cook Barilla Spaghettoni pasta in half of the recommended cooking time.

Step 12

Drain and add Barilla Spaghettoni pasta and lobster meat to the sauce.

Step 13

Simmer for 6 more minutes until Barilla Spaghettoni pasta is al dente. If needed, add more lobster cooking water.

Step 14

Season with parsley and butter and serve.
