2/3 cup | zucchini, julienned |
3 | egg yolks |
3/4 cup | pecorino romano cheese, grated |
To taste | back pepper, salt and mint |
1/6 cup | extra virgin olive oil |

Method
Step 1
Bring a large pot of water to boil, then cook the Barilla Gluten Free Spaghetti pasta according to package directions. Reserve 3/4 cup cooking liquid.
Step 2
Cook the julienned zucchini in a pan with olive oil.
Step 3
Drain Barilla Gluten Free Spaghetti pasta, and mix it in the pan with the zucchini.
Step 4
Remove from the heat, then add the egg yolks and 2 tbsp cooking water. Mix for 30 seconds.
Step 5
Add the pecorino romano cheese and mint; mix and serve with pepper.
