4slices bacon, quartered

15Brussels sprouts, cut in 3

3 tbsphoney

3 tbspolive oil

1onion, finely chopped

3garlic cloves, finely chopped

1/4 cupbutter

1/4 cupflour

3 cupsmilk

1/2 cupcooking water

1 tspnutmeg

1 cupold cheddar, grated

1/2 cupgrated cheese of your choice

Bacon breadcrumbs (optional)

For the bacon breadcrumbs
1 cupcubed bread (leftover baguette, ciabatta or country loaf)

2-3slices of bacon, quartered

Fresh or dried herbs of your choice (thyme, rosemary, etc.)

2 tbspolive oil
