Barilla Penne Rigate Pasta with Vodka Sauce

With tomato paste, chili flakes, cream and Parmigiano Reggiano cheese in the mix

The popular Penne Alla Vodka, beloved in Italian-American cuisine, is quick and easy to make! For this recipe, you'll need premium Barilla Penne Rigate pasta, tomato paste, crushed chili flakes, garlic, onion, vodka and heavy cream. Used to intensify the flavours in the sauce, the vodka is simmered along with the heavy cream, cooking off the alcohol to create a rich and creamy sauce.

Ingredients

Serves 5

1 box Barilla Penne Rigate pasta
1 small yellow onion, diced
2 garlic cloves, minced
4 tbsp extra virgin olive oil, divided
3 tbsp tomato paste
1/2 tsp crushed red pepper flakes
1/4 cup vodka
3/4 cup heavy cream
1/4 cup Parmigiano Reggiano cheese, grated and divided
Parsley or basil, chopped for garnish
To taste salt and black pepper

Method

Step 1

In a skillet over medium-high heat, add 3 tbsp olive oil, onion, and garlic. Cook for 3-5 minutes or until onion is translucent.

Step 2

Add crushed red pepper and tomato paste, stirring and cooking for an additional minute.

Step 3

Add vodka and reduce alcohol. Season with salt and pepper, add heavy cream, and bring to a simmer.

Step 4

Meanwhile, cook Barilla Penne Rigate pasta according to package directions. Reserving 1/2 cup of pasta cooking water, drain pasta and add to the sauce.

Step 5

Add 1/2 cup of pasta cooking water, mix well. Remove skillet from the heat; add 1/2 of the cheese and toss well.

Step 6

Garnish with remaining cheese, remaining olive oil and herbs.
