Barilla Penne Rigate Pasta with Shrimp, Plantain and Mango

Delicious Italian-Carribean fusion of shrimp, plantain and mango in jerk seasoning

Inspired by the sunny shores of the Caribbean, this fusion pasta recipe combines the essence of tropical flavours with perfectly al dente Barilla Penne Rigate pasta. A colourful medley of roasted red peppers, plantains, mango and sautéed shrimp are tossed in jerk seasoning for an explosion of savoury, sweet and spicy flavours!

Ingredients

Serves 6

3/4 lb Barilla Penne Rigate pasta
1 cup cooking water
2 tbsp avocado oil
12 oz shrimp, diced large
1 clove garlic, minced
1 tsp paprika
1 tbsp jerk seasoning
2/3 cup onion, diced small
2/3 cup roasted red pepper, diced small
2/3 cup ripe plantain, diced small
1/4 cup mango, diced small
2 tbsp cilantro
2 tbsp green onion
To taste salt and black pepper

Method

Step 1

Cook Barilla Penne Rigate pasta for 1 minute less than package directions; reserve 1 cup cooking water.

Step 2

Meanwhile in a skillet, over medium-high heat, add oil, onion and sauté 2-3 minutes or until translucent.

Step 3

Add garlic and seasonings, followed by red pepper and plantains; cook for an additional 1-2 minutes. Then, add shrimp and sauté for 2-3 min.

Step 4

Add cooking water to the skillet and bring to a simmer. Drain Barilla Penne Rigate pasta and add to the skillet.

Step 5

Remove from heat and add mango, toss well. Garnish with green onion and cilantro to serve.
