1 24-oz jar | tomato and basil sauce |
2 lb | Italian sausage |
3 tbsp | extra virgin olive oil |
1 cup | onion, chopped |
1/2 cup | carrot, chopped |
1/2 cup | celery, chopped |
2 | bay leaves |
2 tsp | fresh rosemary, chopped |
1/8 tsp | black pepper freshly ground |
3/4 cup | red wine |
1 1/2 cup | black pitted olives, chopped |

Method
Step 1
Cook sausage in very large skillet over medium heat about 6 minutes or until no longer pink, stirring occasionally. Drain; set aside.
Step 2
Heat olive oil in skillet over medium heat.
Step 3
Add onions, carrots, celery, bay leaves, rosemary, and pepper. Sauté 5 to 8 minutes or until vegetables are crisp-tender, stirring occasionally.
Step 4
Add wine and continue cooking for approximately 10 minutes, or until wine is almost completely reduced.
Step 5
Remove bay leaves; discard.
Step 6
Add sausage, tomato-basil sauce and olives into wine mixture. Continue cooking 3-5 minutes, or until thoroughly heated.
Step 7
Cook Barilla Penne Rigate pasta according to package directions; drain.
Step 8
Add sauce mixture to Barilla Penne Rigate pasta and serve hot.
