1 cup | Barilla Pastina pasta |
1/4 cup | extra virgin olive oil |
2 tbsp | fresh lemon juice + 1 tsp lemon zest |
1 cup | flat leaf parsley, minced |
1/4 cup | mint, minced |
2 | Persian or Kirby cucumbers, thinly sliced |
1 | large garlic clove, minced |
1 pt | multicolour cherry tomatoes, halved |

Method
Step 1
In a large saucepan of boiling salted water, cook the Barilla Pastina pasta until al dente, about 6 minutes. Drain and spread on a plate to cool.
Step 2
In a medium bowl, whisk the olive oil with the lemon juice and zest. Add the minced parsley, mint, cucumber and garlic, and toss.
Step 3
Add the Barilla Pastina pasta and tomatoes and toss again. Season with salt and serve at room temperature.
