Ingredients

Serves 8

1 cup Barilla Pastina pasta
1/4 cup extra virgin olive oil
2 tbsp fresh lemon juice + 1 tsp lemon zest
1 cup flat leaf parsley, minced
1/4 cup mint, minced
2 Persian or Kirby cucumbers, thinly sliced
1 large garlic clove, minced
1 pt multicolour cherry tomatoes, halved
Kosher salt

Method

Step 1

In a large saucepan of boiling salted water, cook the Barilla Pastina pasta until al dente, about 6 minutes. Drain and spread on a plate to cool.

Step 2

In a medium bowl, whisk the olive oil with the lemon juice and zest. Add the minced parsley, mint, cucumber and garlic, and toss.

Step 3

Add the Barilla Pastina pasta and tomatoes and toss again. Season with salt and serve at room temperature.
