Warm up your wheels for Domenica Italiana

Ingredients

Serves 4

320g Barilla Ditaloni
250g Cooked chickpeas
80g Tahini
70g EVOO
1 Clove of garlic
Juice of one lemon
175ml Chickpea cooking water
To taste Salt, black pepper and, if desired, paprika
160g Whole chickpeas
6 halves Diced sun-dried tomatoes
5 Stalk of parsley
To taste EVOO, lemon juice, salt and pepper

Method

Step 1

Blend chickpeas, EVOO, garlic, tahini and a splash of chickpea water until smooth. Season and set aside.

Step 2

Mix remaining chickpeas with diced sun-dried tomatoes & chopped parsley.

Step 3

Season with EVOO, lemon juice, salt and pepper.

Step 4

Cook pasta al dente, drain and toss with hummus.

Step 5

Add a splash of pasta water if needed for creaminess.

Step 6

Plate, top with seasoned chickpeas, drizzle EVOO and enjoy!

Tip

Add sumac or pomegranate seeds for a fresh twist!
