Ingredients

1 box | Barilla® Linguine |
190 gr | Barilla Pesto Genovese |
1 tablespoon | Extra Virgin Olive Oil |
1 garlic clove | , chopped |
1 | medium onion, thinly sliced |
4 cups | (1 pound) zucchini, sliced and quartered |
½ cup | Parmigiano-Reggiano cheese, thinly sliced, not grated |
Salt and black pepper to taste |

Method
Step 1
Bring a large pot of water to a boil
Step 2
Heat oil in a large skillet over medium heat
Step 3
Add, onion and sauté for 3-4 minute or until tender
Step 4
Add garlic and zucchini, sauté for 2 minutes then season with salt and pepper to taste
Step 5
Cook the pasta according to the directions, reserve ½ cup of the cooking water
Step 6
Drain the pasta and combine with the zucchini
Step 7
Add the pesto and ½ cup cooking water and stir to combine
Step 8
Remove from the heat and garnish with cheese
