Ingredients

1Box Barilla^® Ditalini

6Tablespoons Extra Virgin Olive Oil, Divided

1Can black beans, drained

1Can corn, drained

3Tablespoons fresh cilantro, chopped

2Limes, juiced

½Cup Queso Blanco cheese, grated

1Large avocado, halved, peeled, pitted, diced

To tasteSalt and black pepper

Method

Step 1

Bring a large pot of water to a boil, add salt.

Step 2

Cook pasta 1 minute less than package directions.

Step 3

Drain pasta and toss it in a large mixing bowl with 1 tablespoon of olive oil, place on a sheet tray to cool.

Step 4

Transfer pasta to large bowl.

Step 5

Add remaining ingredients except for avocado and toss to blend.

Step 6

Rest pasta salad for 30 minutes, allowing flavors to meld.

Step 7

Add avocado and stir to combine.
