Ingredients
Serves 6
¾ | Box Barilla® Ditalini pasta |
4 | Tablespoons extra virgin olive oil, divided |
1 | Cup yellow onion, small diced |
1 | Medium butternut squash, peeled, seeded and small diced |
4 | Cups veggie broth |
3 | Slices brioche bread, crust off |
6 | Ounces brie cheese, diced, at room temperature |
1 | Cup basil |
To Taste | Sea salt and freshly ground black pepper |

Method
Step 1
Bring a large pot of salted water to a boil; cook pasta two minutes less than the package directions.
Step 2
Pre-heat oven to 400° F.
Step 3
In a separate pot, bring broth to a boil.
Step 4
Meanwhile in a skillet sauté onion with half the olive oil over medium heat until translucent and thoroughly cooked, about four minutes. Add butternut squash, sauté for three minutes, then add the veggie broth, salt and pepper and simmer for 10 minutes, until butternut squash is thoroughly cooked, and liquid has been reduced by 2/3.
Step 5
In a food processor process the diced brioche with basil a pinch of salt and pepper until thin crumbs, and the color turns green, then place on a sheet pan in the oven and toast it lightly, several minutes.
Step 6
In a blender process ¾ of the butternut squash mixture, place back on heat with the rest of the diced butternut squash.
Step 7
Drain pasta two minutes early and toss with butternut squash sauce until well combined and sauce has a nice creamy texture. Turn the heat off, stir in cheese and remaining olive oil, mix well.
Step 8
Serve on single dinner plates and top with a sprinkle of basil-flavored toasted brioche.
