Ingredients
Serves 8
1 | Box Barilla® Ditalini |
2 | Cups zucchini |
3/4 | Cup ricotta cheese |
¼ | Cup onion |
¼ | Cup grated Parmigiano-Reggiano cheese |
To taste | Extra virgin olive oil |
To taste | Salt and pepper |

Method
Step 1
Heat a tablespoon of olive oil in a pan over medium heat and add the onion.
Step 2
When the onion has softened and browned, add zucchini, salt and pepper and cover.
Step 3
After about 15 minutes, uncover and cook zucchini, allowing any water produced by the vegetable to evaporate.
Step 4
In the meantime, cook the pasta in lightly salted boiling water for the amount of time indicated on the package.
Step 5
Drain the pasta and toss with the zucchini and ricotta, crumbled with the tines of a fork, mixing well.
Step 6
Sprinkle with the grated Parmigiano-Reggiano cheese and serve hot.
