Serves 4

¼ Box Barilla® Ditalini
2 Tablespoons extra virgin olive oil
½ Cup carrot, diced
½ Cup celery, diced
1 Cup onion, diced
1 Clove garlic, chopped
32 Ounces vegetable broth, low sodium
1 28 Ounce can San Marzano tomatoes, chopped no salt added
To taste Salt and black pepper
2 Cans cannellini beans
2 Tablespoons fresh parsley, chopped

Method

Step 1

Heat olive oil in a large stock pot.

Step 2

Add carrots, celery and onion; sauté for 2-3 minutes.

Step 3

Add garlic and sauté for 1 minute.

Step 4

Add broth and tomatoes; bring to a simmer; season with salt and pepper.

Step 5

Add Ditalini pasta and beans; cook for ½ the recommended time on the package.

Step 6

Remove from the heat; let the soup rest for 30 minutes before serving; top with fresh parsley.
