1 | Box Barilla® Gluten Free Penne |
4 | Tablespoon, Extra virgin olive oil |
4 | Boneless/skinless chicken thighs |
1 | Vidalia onion, cut julienne style |
1 | Red pepper, cut julienne style |
6 | Domestic mushrooms, quartered |
3 | Cloves of garlic, chopped |
1 | Tablespoon, Cajun seasoning |
½ | Cup White Wine |
½ | Cup heavy cream |
½ | Cup parmesan cheese, grated |
To taste | Salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil
Step 2
Meanwhile in a hot skillet, brown the chicken in olive oil over high heat for approximately 5 minutes
Step 3
Add vegetables and Cajun seasoning & sauté for 3 additional minutes
Step 4
Stir in wine then season with salt and pepper, then reduce liquid by half
Step 5
Add cream and bring to simmer
Step 6
Meanwhile, cook pasta according to package directions
Step 7
Drain and toss with sauce & stir in cheese before serving
