Barilla® Gluten Free Penne with Cajun Chicken

Ingredients

Serves 6

1 Box Barilla® Gluten Free Penne
4 Tablespoon, Extra virgin olive oil
4 Boneless/skinless chicken thighs
1 Vidalia onion, cut julienne style
1 Red pepper, cut julienne style
6 Domestic mushrooms, quartered
3 Cloves of garlic, chopped
1 Tablespoon, Cajun seasoning
½ Cup White Wine
½ Cup heavy cream
½ Cup parmesan cheese, grated
To taste Salt and black pepper

Method

Step 1

Bring a large pot of water to a boil

Step 2

Meanwhile in a hot skillet, brown the chicken in olive oil over high heat for approximately 5 minutes

Step 3

Add vegetables and Cajun seasoning & sauté for 3 additional minutes

Step 4

Stir in wine then season with salt and pepper, then reduce liquid by half

Step 5

Add cream and bring to simmer

Step 6

Meanwhile, cook pasta according to package directions

Step 7

Drain and toss with sauce & stir in cheese before serving
