Ingredients

1 | Box Barilla® Gluten Free Rotini |
½ | Red onion diced |
5 | Tablespoons extra virgin olive oil |
1 | Zucchini diced |
10 | Fava bean pods cleaned and peeled |
1 | Pint grape tomatoes washed |
1 | Yellow bell pepper roasted and diced |
½ | Cup Parmigiano-Reggiano cheese grated (optional) |
6 | Leaves basil torn |
To taste | Salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil, season with salt.
Step 2
Sauté onion in olive oil until translucent in a large skillet over medium heat, about five minutes.
Step 3
Add zucchini, fava beans, grape tomatoes and yellow pepper, sauté for three minutes over high heat.
Step 4
Cook pasta according to package directions.
Step 5
Drain pasta and toss it with veggies in a large mixing bowl.
Step 6
Add cheese (optional) and basil before serving.
