Made with Barilla® Gluten Free Spaghetti pasta
Ingredients
Serves 4
1 | Box Barilla® Gluten Free Spaghetti |
½ | Cauliflower cut into small florets |
4 | Tablespoons + 2 for drizzling extra virgin olive oil |
To taste | Salt and black pepper |
1 | Cup onion diced |
1 | Tablespoon capers (optional) |
¼ | Cup golden raisins soaked in 1water (optional) |
1 | Tablespoon parsley chopped |
½ | Cup Parmigiano Reggiano cheese grated |

Method
Step 1
Pre-heat the oven to 425°F and bring a large pot of water to a boil.
Step 2
Toss the cauliflower in 2 tablespoons of olive oil, season with salt and pepper.
Step 3
Place on a sheet tray and roast in the oven until golden brown.
Step 4
Meanwhile, in a large skillet sauté the onion in 2 tablespoons of olive oil.
Step 5
Cook the pasta according to package directions.
Step 6
Reserve 1 cup of the cooking liquid and add it to the onions.
Step 7
ADD the pasta to the sauce and cook for 1 minute over medium heat, stirring frequently until it becomes creamy.
Step 8
ADD the cauliflower, capers and raisins and toss to combine.
