Ingredients
Serves 6
1 | Box Barilla® Gluten Free Spaghetti |
2 | Cloves garlic chopped and divided |
5 | Tablespoons extra virgin olive oil divided |
1 | Pound medium-sized shrimp peeled and deveined |
1 | Pound ripe plum tomatoes blanched, peeled and diced |
½ | Cup gluten free bread crumbs |
1 | Tablespoon fresh Italian parsley chopped |
To taste | Salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil, season with salt.
Step 2
Sauté garlic with 4 tablespoons of olive oil in a large skillet over medium heat.
Step 3
Add shrimp and tomatoes, sauté over high heat for 2 minutes or until shrimp are cooked.
Step 4
Season with salt and black pepper.
Step 5
Combine bread crumbs, remaining olive oil, and parsley in the same skillet, cook until golden and crunchy over medium heat.
Step 6
Cook pasta according to package directions.
Step 7
Darin pasta and toss it with the shrimp sauce in a large mixing bowl.
Step 8
Top with crunchy bread crumbs before serving.
