2Small shallots minced

5Extra Virgin Olive Oil

1Cup prosecco

1Cup Vegetable Broth

1 ½Cups heavy cream

To tasteSalt and white pepper

12Chives minced

1Tablespoon caviar

Method

Step 1

Cook pasta according to package directions.

Step 2

Meanwhile, slowly sweat shallots with 4 tablespoons of olive oil.

Step 3

Add prosecco and reduce to half.

Step 4

Add broth, bring to a boil and reduce to half.

Step 5

Add cream, salt and white pepper and simmer.

Step 6

Drain and toss pasta with the sauce.

Step 7

Serve with chives and a dollop of caviar on top; drizzle with remaining olive oil.
