Ingredients
Serves 4
1/2 | Box Barilla® Mezzi Rigatoni |
1 | Teaspoon Extra Virgin Olive Oil Divided |
2 | Ounces Fresh Spinach |
3 | Ounces Ricotta Cheese |
2 | Tablespoons Parmigiano-Reggiano Cheese Divided |
1 | PACKAGE small Paper Liner |

Method
Step 1
BRING a large pot of water to a full boil.
Step 2
Add salt to taste.
Step 3
ADD pasta and cook according to package directions.
Step 4
Drain well and place pasta on a large sheet pan.
Step 5
DRIZZLE with a little olive oil to taste and let cool.
Step 6
Ricotta and Spinach Filling: SAUTÉ spinach in 1 teaspoon olive oil over medium heat.
Step 7
Cool, drain and chop fine.
Step 8
GRATE 2 tablespoons Parmigiano cheese.
Step 9
ADD spinach to the ricotta cheese and mix until blended.
Step 10
ADD Parmigiano cheese and mix well.
Step 11
FILL each Mezzi Rigatoni with filling using a pastry bag.
Step 12
PLACE each Rigatoni in a miniature paper liner.
Step 13
GARNISH with Parmigiano cheese shavings.
