Ingredients

1 | Box Barilla Mezzi Rigatoni |
1/2 | Cup Extra Virgin Olive Oil |
1 | Pound Italian Sausage Crumbled |
2 | Medium Onions Chopped |
4 | Cloves Garlic Minced |
1 | Medium Eggplant Peeled Cubed |
2 | Cups Red Bell Peppers Chopped |
1 1/2 | Teaspoon Salt |
1/4 | Teaspoon Black Pepper Freshly Ground |
1 1/2 | Cup Fresh Basil Chopped Divided |

Method
Step 1
BRING a large pot of water to a boil.
Step 2
HEAT oil in large skillet over medium-high heat.
Step 3
Add sausage, onion and garlic; cook 5 minutes, stirring occasionally.
Step 4
Reduce heat to medium.
Step 5
Add eggplant, red pepper, salt and black pepper; cover.
Step 6
Cook 15 to 20 minutes or until eggplant is tender and sausage is cooked through; stir occasionally.
Step 7
Meanwhile, COOK Mezzi Rigatoni according to package directions; drain and return to pot.
Step 8
ADD skillet mixture to hot Mezzi Rigatoni.
Step 9
Stir in basil, reserving 2 teaspoons.
Step 10
Mix well.
Step 11
Transfer to serving platter; sprinkle with reserved basil.
