Barilla Mezzi Rigatoni with Sausage, Eggplant & Sweet Peppers

Ingredients

Serves 8

1 Box Barilla Mezzi Rigatoni
1/2 Cup Extra Virgin Olive Oil
1 Pound Italian Sausage Crumbled
2 Medium Onions Chopped
4 Cloves Garlic Minced
1 Medium Eggplant Peeled Cubed
2 Cups Red Bell Peppers Chopped
1 1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper Freshly Ground
1 1/2 Cup Fresh Basil Chopped Divided

Method

Step 1

BRING a large pot of water to a boil.

Step 2

HEAT oil in large skillet over medium-high heat.

Step 3

Add sausage, onion and garlic; cook 5 minutes, stirring occasionally.

Step 4

Reduce heat to medium.

Step 5

Add eggplant, red pepper, salt and black pepper; cover.

Step 6

Cook 15 to 20 minutes or until eggplant is tender and sausage is cooked through; stir occasionally.

Step 7

Meanwhile, COOK Mezzi Rigatoni according to package directions; drain and return to pot.

Step 8

ADD skillet mixture to hot Mezzi Rigatoni.

Step 9

Stir in basil, reserving 2 teaspoons.

Step 10

Mix well.

Step 11

Transfer to serving platter; sprinkle with reserved basil.
