Ingredients for Butternut Squash Lasagna:
1 | Box Barilla® Oven-Ready Lasagne pasta |
1 | Jar Barilla® Marinara sauce, divided |
7 | Ounces butternut squash, small cubes |
1 | clove garlic, chopped |
1 | 5-Ounce bag baby spinach |
1/2 | Cup Parmigiano-Reggiano cheese, grated |
1 | Cup mozzarella cheese, shredded |
8 | Ounces smoked turkey-ham, sliced |
To taste | Sea salt and black pepper |
Ingredients for the Béchamel Sauce:
1½ | Quart whole milk |
1 | Small onion, chopped |
8 | Tablespoons butter (1 stick) |
7 | Tablespoons flour |
2 | Cups of butternut squash, peeled, ½ inch cubed |
A Pinch | Nutmeg |
To Taste | Salt and black pepper |

Method
Step 1
Preheat oven to 400° F, meanwhile in a bowl season squash with salt & pepper, a drizzle of oil, & wrap with cling film. Microwave for 3 minutes.
Step 2
Prepare the béchamel: melt butter in a saucepan, add onion, cook until soft. Add flour, squash, and stir for 3 minutes. Add milk and gently bring to a boil. Blend with an immersion (stick) blender, then season with salt, pepper, and nutmeg. Set aside.
Step 3
In a frying pan add olive oil and garlic, cook until golden. Then add spinach, season & sauté - set aside.
Step 4
Build your lasagne: In a rectangular baking dish, spread a thin layer of béchamel sauce and then cover with lasagne sheets.
Step 5
Add another layer of béchamel, then ¼ of the Marinara sauce, sautéed spinach, turkey-ham, cubes of squash and both types of cheese. Repeat 4 times.
Step 6
Cover and bake lasagne for 30 minutes. Uncover and bake an additional 8-10 minutes until the corners are starting to brown and the lasagne is bubbling and thoroughly cooked. Let rest 10 minutes.
