Ingredients
Serves 7
1 | Box Barilla® Protein+™ Farfalle |
3 | Tablespoons Extra Virgin Olive Oil |
2 | 1/Onion, Chopped |
1 | Zucchini, Diced |
2 | Tomatoes, Diced |
1 | Cup Ricotta Cheese |
2 | Tablespoons Fresh Parsley, Chopped |
1/2 | Cup Vegetable Broth |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Heat olive oil in a large skillet over medium heat. Add onions and sauté for 3 minutes.
Step 3
Add zucchini and sauté for 2 minutes.
Step 4
Add tomatoes and sauté for 1 minute. Season mixture with salt and pepper.
Step 5
Cook pasta according to package directions.
Step 6
Add cheese and 1 ladle (standard ladle is 4oz or use 1/2 cup) of the pasta cooking water to the vegetable mixture.
Step 7
Drain pasta and toss with the sauce in the skillet. Sprinkle with fresh parsley.
