Ingredients

Serves 7

1 Box Barilla® Protein+™ Farfalle
4 Tablespoons extra virgin olive oil
1 Clove garlic chopped
1 Teaspoon fresh oregano chopped
1 Butternut squash diced into large pieces
2 Zucchini sliced into half moons
To taste Salt
To taste Black pepper
1/3 Cup Pecorino cheese grated

Method

Step 1

Bring a large pot of water to a boil.

Step 2

In a large skillet, sauté garlic and oregano in olive oil for 1-2 minutes.

Step 3

Add butternut squash and sauté for 8-10 minutes.

Step 4

Add zucchini and sauté for 2 minutes.

Step 5

Season with salt and pepper.

Step 6

Cook pasta 1 minute less than package directions; reserve 1 cup of the cooking water.

Step 7

Add 1 cup of cooking water to the sauce and bring to a simmer.

Step 8

Add cooked pasta to the sauce and cook for 1 minute.

Step 9

The sauce should become creamy.

Step 10

Remove from heat and toss with cheese.
