1 | Box Barilla® Red Lentil Rotini |
8 | oz. Monkfish, cut in pieces |
3/4 | Cup Cauliflowers |
1/4 | Cup Black Pitted Olives |
4 | oz. Fava Beans |
1 | Garlic clove |
2 | Tablespoon Extra Virgin Olive Oil |

Method
Step 1
Deep the fava beans in boiling water for 1 inch, cool down in cold water and peel. In the same water blanche the cauliflowers sprouts.
Step 2
Drain and set aside.
Step 3
Heat a pan with the olive oil and a garlic clove.
Step 4
Sauté the monkfish, add the cauliflowers, the pitted olives and the fava beans.
Step 5
Cook the Rotini according to package directions.
Step 6
Drain and sauté in the pan with the ingredients, adding a little of the cooking water, olive oil and some mint leaves.
Step 7
Sauté, add herbs and pepper. Serve.
