Ingredients

Serves 8

1 Box Barilla® Spaghetti
4 Tablespoons extra virgin olive oil
¾ Pound Italian sausage, crumbled
1 Pint yellow cherry tomatoes
3 Zucchini, sliced into ribbons
1 Tablespoon parsley, chopped
1 Tablespoon oregano, chopped
¾ Cup Parmigiano-Reggiano cheese, shredded
To taste Salt and pepper

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, in a large skillet, sauté sausage for 4-5 minutes or until golden.

Step 3

Add zucchini and sauté for 3-4 minutes.

Step 4

Add tomatoes and cook for an additional 2 minutes, then season with salt and pepper to taste.

Step 5

Cook pasta according to package directions.

Step 6

Drain and toss with the sauce and ½ cup of the cooking water.

Step 7

Remove the skillet from the heat and fold in the herbs and cheese.
