Ingredients
Serves 4
8 | oz. Barilla® Spaghetti pasta |
2 | Tablespoons olive oil |
2 | Shallots, chopped |
3 | Cloves garlic, minced |
1 | Pound boneless skinless chicken breast, cut into 1-inch pieces |
1/2 | Cup dry white wine |
3 | Cups chicken broth |
2 | Cups baby spinach |
1 | Cup heavy cream |
1 | Teaspoon Italian seasoning |
1/2 | Cup Parmesan cheese, grated |
2 | Tablespoons fresh parsley, chopped |
1 | Teaspoon kosher salt, plus more |
1/2 | Teaspoon freshly cracked black pepper, plus more |

Method
Step 1
Heat the olive oil in a large pan or pot over medium heat.
Step 2
Add the chopped shallots and sauté́ for 2-3 minutes, until soft. Add the garlic and cook for 30 more seconds.
Step 3
Add the chicken, and season with 1 teaspoon salt and 1/2 teaspoon pepper. Cook the chicken for 10 minutes; stirring frequently. Transfer to a plate.
Step 4
Add the dry white wine and deglaze the pan. Let it reduce for 1 minute. Add chicken broth and bring to a boil.
Step 5
Add Barilla Spaghetti; stir and cover. Reduce heat to low. Simmer for about 10 minutes, stirring every few minutes. Add the spinach, cream, and Italian seasoning, cook for 1 more minute.
Step 6
Return the chicken back to the pot. Remove from heat and stir in Parmesan cheese.
Step 7
Season with salt and pepper, to taste. Garnish with parsley and serve.
