Ingredients

Serves 6

1 Box Barilla® Spaghetti
5 Tablespoons extra virgin olive oil
2 Garlic cloves, chopped
2 Jars roasted peppers, sliced thin
1 Bag baby spinach
To taste Salt and black pepper
½ Cup Pecorino cheese, shredded
½ Cup pine nuts, toasted

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile in a large skillet sauté garlic in olive oil for 1-2 minutes, then add peppers and turn the heat to high.

Step 3

Sauté for 3-4 minutes then season with salt and pepper.

Step 4

Cook pasta according to package directions.

Step 5

Drain and toss the pasta with the roasted peppers and spinach.

Step 6

Remove the skillet from the heat and fold in half the cheese.

Step 7

Top with remaining cheese and pine nuts.
