Ingredients
Serves 8
1 | Box Barilla® Thin Spaghetti |
4 | Tablespoons Extra Virgin Olive Oil |
1/2 | Onion, Chopped |
1 | Yellow Bell Pepper, Sliced Thinly |
1 | Red Bell Pepper, Sliced Thinly |
To taste | Salt and Black Pepper |
1 | Cup Arugula, Chopped |
1/2 | Cup Parmigiano-Reggiano Cheese, Grated |

Method
Step 1
Cook pasta according to package directions.
Step 2
Meanwhile, in a large skillet, heat olive oil and sauté onions for 2-3 minutes.
Step 3
Add peppers and season with salt and pepper. Cook until tender, about 4-5 minutes.
Step 4
Drain pasta and add to skillet; toss.
Step 5
Stir in arugula, top with cheese and serve.
