Ingredients

Serves 8

1 Box Barilla® Thin Spaghetti
4 Tablespoons Extra Virgin Olive Oil
1/2 Onion, Chopped
1 Yellow Bell Pepper, Sliced Thinly
1 Red Bell Pepper, Sliced Thinly
To taste Salt and Black Pepper
1 Cup Arugula, Chopped
1/2 Cup Parmigiano-Reggiano Cheese, Grated

Method

Step 1

Cook pasta according to package directions.

Step 2

Meanwhile, in a large skillet, heat olive oil and sauté onions for 2-3 minutes.

Step 3

Add peppers and season with salt and pepper. Cook until tender, about 4-5 minutes.

Step 4

Drain pasta and add to skillet; toss.

Step 5

Stir in arugula, top with cheese and serve.
