Ingredients

1Box Barilla^® Wavy Lasagne

1Cup sweet bell pepper (red, orange, green or yellow), diced

2teaspoons extra virgin olive oil

2Cloves garlic, minced

½Cup medium red onion, diced

2Cups reduced fat chicken broth

16Ounces tomatillo salsa or salsa Verde

3Cups cooked rotisserie chicken, chopped

3Cups Colby-Jack cheese, shredded, divided

½Cup Queso fresco cheese, crumbled

1teaspoon fresh cilantro, finely chopped

Method

Step 1

Cook pasta according to package directions. Drain pasta sheets. Let cool for a minute or two, then place pasta sheets flat on a sheet tray sprayed with non-stick spray to prevent sticking.

Step 2

Preheat oven to 350° F.

Step 3

In a large saucepan, sauté peppers, onion, and garlic in olive oil until crisp tender. Add tomatillo salsa and broth. Simmer on low until slightly thickened. Fold in chicken. Simmer for 10 minutes. Remove from heat and let cool for 15 minutes.

Step 4

To make rollups, place cooked lasagne sheet on a clean, flat surface. Spoon ½ cup of tomatillo salsa chicken mixture down the length of each sheet of pasta. Sprinkle ¼ cup of Colby-Jack cheese over filling.

Step 5

Starting at one end, carefully roll up one lasagna piece and place seam side down in an 11” x 7” baking dish. Repeat with remaining pasta.

Step 6

Spoon any remaining filling or liquid over rollups and sprinkle remaining cheese over the top of the rollups.

Step 7

Cover with foil. Bake for 30 minutes. Remove foil and bake for an additional 5 minutes. Let rest for 5 minutes, then serve topped with crumbled Queso fresco cheese and cilantro.
