1 | Box Barilla® Chickpea Orzo pasta |
½ | Cup extra virgin olive oil |
1 | English cucumber, small dice |
½ | Parsley, chopped |
2 | Tablespoons mint, chopped |
½ | Onion, small dice |
3 | Plum tomatoes, small dice |
¼ | Cup lemon juice |
To taste | Sea salt |
To taste | Black pepper |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Cook pasta according to package directions, drain well, and place on a sheet tray with a drizzle of olive oil to cool.
Step 3
Meanwhile, place remaining ingredients in a bowl and mix.
Step 4
Return orzo to the bowl and mix well. Adjust seasonings and serve.
