1Pound Chicken breast, sliced into 1-inch pieces

1Tablespoon sweet paprika

3Tablespoons extra-virgin olive oil, divided

½Cup Parmigiano-Reggiano cheese, grated

Method

Step 1

Marinate chicken with 1 Tablespoon extra-virgin olive oil, paprika, and salt. Let sit for ½ hour.

Step 2

Bring a large pot of salted water to a boil; cook pasta according to package directions reserving ½ cup of pasta water.

Step 3

In a separate bowl, whisk together pasta cooking water with pesto.

Step 4

Heat a skillet until it is very hot, at least 2 minutes. Add 2 tablespoons of olive oil in a pan and swirl. The oil should be shimmery. Add the marinated chicken and sear on one side for 5 minutes. Turn the chicken and cook for an additional 5-7 minutes until cooked through.

Step 5

Once the chicken is cooked through, toss with the pasta, pesto mixture, and top with cheese.

Step 6

Serve in bowls and top with additional cheese.
