¾ | Cup basil, chopped |
24 | Ounces zucchini, cut into thin half moons |
2 | Tablespoons extra virgin olive oil |
2 | 1 Clove garlic, peeled |
To Taste | Salt & black pepper |

Method
Step 1
Bring a large pot of salted water to a boil and cook pasta according to package directions; reserve ½ cup of pasta water.
Step 2
Meanwhile, in a large skillet over medium heat add olive oil and whole clove garlic. Swirl the oil and the garlic allowing the garlic to tan and pick up color. When oil is hot, add zucchini, season with a large pinch of salt and cracked black pepper, and cook for 5-6 minutes, stirring occasionally; then remove the garlic.
Step 3
Drain pasta reserving ½ cup of the pasta cooking water.
Step 4
Add pasta directly into the pan with the zucchini, along with the reserved pasta cooking water, let it sizzle, stir, and then turn off the heat. Taste pasta and adjust seasoning as needed.
Step 5
Garnish with basil and plate up, season with sea salt, pepper, and a drizzle of olive oil.
