2 | Medium size zucchini , 1/2 inch diced |
2 | Pints multicolor cherry tomatoes |
3 | Slices of lemon, ½ cm thick |
8 | Oz feta cheese, whole |
¼ | Cup pistachio, roughly chopped |
1 | Tbs fresh oregano, roughly chopped |
15 | Leaves of basil, torn |

Method
Step 1
Preheat oven to 200° C and bring a pot of salted water to boil.

Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half E.V.O, place feta right in the center. Bake in the oven for 20 minutes.
